Plume and Paddock

Perhaps the most unique product of our Palace Of Barrels facility yet! This is a cocktail-inspired concoction reminiscent of the uncanniest witchcraft! In the winter of 2017, we set out to make a winter citrus gose with some restaurant industry friends. A bursting fermentor had other plans. More than 4 years later our Barrel Program Director Daniel Paddock has conjured this brew out from its hibernation in Heaven Hill bourbon barrels boasting all the oxidative complexity of amontillado sherry, and reanimated the brew with the pucker of tart citrus fruit, lemon peel, and the cooling pleasures of spearmint tea!
